Spanish-Style Couscous

Ingredients
Smart Gound original soy protein crumbles14 ounces vegetable broth1 small bell pepper, cut into 1/2-inch slices1/2 cup pimento-stuffed green olices, sliced1/2 medium onion, chopped2 cloves garlic, minced1 teaspoon ground cumin1/2 teaspoon dried thyme leaves1 1/3 cups water1 cup uncooked couscous
Directions

Place broth, pepper, olives, onion, garlic, cumin, thyme, and protein crumbles in slow cooker. Cover; cook on low 2-4 hours (or until bell pepper is tender).

Bring water to a boil over high heat in a small saucepan. Stir in couscous. Cover; remove from heat. Let stand 5 minutes; fluff with fork. Spoon couscous onto plates; top with beef mixture.
