Cheese Stuffed Chicken Breasts

4 skinless, boneless chicken breasts4 slices part-skim mozzarella cheese1 egg white, slightly beaten2 Tbsp flour1 Tbsp grated Parmesan cheese1 tsp snipped parsley1/4 tsp. paprikadash peppernonstick spray coating
Rinse chicken: pat dry. Use a sharp knife to cut a small pocket in the thickest side of each chicken breast.
Insert a mozzarella slice in each pocket.
In a small mixing bowl beat egg white slightly.
In another bowl stir together flour, Parmesan cheese, parsley, paprika and pepper. Dip chicken in egg white. Then, coat with flour mixture. Spray a baking dish with nonstick coating. Arrange chicken in dish. Bake in a 375 degree oven for 20 to 25 minutes or till chicken is tender and no longer pink.

It was quite delicious though the only problems were that the breeding was still really powdery when I took it out, it took 45 minutes instead of 20-25, and the cheese didn't really stay inside the chicken. Overall though I just scooped some of the cheese that oozed out from the pan and put it back - 2/29/16
