Cashew Chicken

Ingredients
Coconut Oil, 2 tbsp (Chicken Thigh, 7 thigh, bone and skin removed diced into chunksOnions, raw, 1 medium chopped Bamboo shoots, cooked, 1 cup Zucchini, 3 cup, sliced Cashew Nuts, oil roasted (salt added), 1 cup, halves and whole Tamari, 3 tbspGarlic, 3 tspWater chestnuts, 1.0 cup slices
Directions
Saute the onions in the coconut oil.
Add the chicken and garlic and about 1/4 cup of cashews.
Once the chicken has started to brown a bit, add the Tamari and vegetables.
Cook until done.
