2 egg whites2 tsp red wine vinegar1/3 cup dry Italian Bread Crumbs1/2 tsp dried parsley flakes1/4 tsp garlic powder2 boneless, skinless chicken breasts 8oz each
Beat the egg whites and vinegar in small dish. Set a side. In another bowl combine bread crumbs, parsley, garlic powder. Dip chicken into egg white mixture then roll in bread crumb mixture. Bake uncovered at 375 for 20-25 minutes.

I was so excited to try this, but it was far short of spectacular. I increased the spices a bit, but the chicken was still very bland & the breadcrumb coating felt like I was eating sawdust. I re-read the recipe & I don't see where I could have done anything wrong, so this is one I won't make again - 1/9/11
