Mint Feta Cheese Potato Salad

Ingredients
6 ounces athenos reduced fat feta cheese, crumbled4 tablespoons best foods low-fat mayonnaise5 cups of red potatoes with skins, boiled, cubed1 cup fresh mint leaves1 1/2 cup low-fat plain yogurt
Directions
Boil potatoes and cut into cubes. Finely chop mint leaves. Mix mint with yogurt and mayonnaise. Stir mixture of mint, yogurt, and mayonnaise into cubed potatoes. Mix feta cheese throughout. Add salt and pepper as desired. Serve warm or cold. Makes 5 1-cup servings.
