Vegetable Soup P90X style

Ingredients
10 cups fat free chicken broth (use reduced sodium if you prefer)4 small red potatoes, cut into 1 inch cubes4 cups onions, quartered1.5 cup carrots, sliced 1 inch thick3 cups celery, sliced 1 inch thick2 cups zucchini, sliced 1 inch thick8 ounces tomato sauce, canned (low sodium if you prefer)2 cloves garlic, minced1/4 bunch fresh parsley, chopped1/4 bunch fresh cilantro, choppedblack pepper to taste
Directions
1. In a large stockpot, combine chicken broth, potatoes, onions, carrots, and celery. Bring to a boil, reduce heat to medium high and simmer until the potatoes are tender, 20-30 minutes.

2. Add the zucchini, tomato sauce, garlic, parsley and cilantro. Reduce heat to medium low and simmer 10-15 minutes more until zucchini is JUST tender. Season to taste with black pepper and serve.

Serves about 18, 1 cup serves.

You can also add protein powder if you so desire. 1 TB powder to 1 cup soup.

    Soup is great, we add divide and freeze. Makes a great lunch, also try adding 1 oz of roast beef to each frozen portion it gives it lots of flavor. - 9/6/10
