Like many of us, I look for recipes that I can cook once and morph into another meal later in the week. This recipe is very satisfying served with your favorite vegetable side. The leftovers are tasty cubed and served cold in a quick midweek dinner salad of your favorite greens, or added to some Chinese vegetables for a quick stir fry.
