Low Fat Turkey Cutlet and Brown Rice

1 Pkg *Honeysuckle White Turkey Cutlets (5 cutlets per pack)1 Medium Onion, diced3 cloves garlic, minced2 servings Pamjuice of 1 lemon*1 cup brown rice (see note)2 1/2 cups Swanson FF 33% less sodium chicken brothSalt (optional)Black Pepper (optional)
RICE:
Bring the chicken broth to a boil. Add the brown rice and simmer covered for 50 minutes or until the rice is cooked.
CHICKEN:
Heat the Pam in a large skillet. Add onions and garlic. Cook until soft. Add the turkey cutlets and cook until nice and golden brown on each side. Take off the heat and add lemon juice, salt and pepper. Serve over rice.
Goes very well with some nice steamed broccoli.
Makes 5 servings.
** Note: you can also sub out Lundberg Jubilee rice for the Brown
