Sugar Free Lemon Chicken Sauce

Ingredients
1 Cup Water3/8 Cup Lemon Juice (bottled is fine)1/8 Cup Lime Juice3/4 Cup Splenda (regular sugar works fine to but more calories)3 Tablespoons Cornstarch3 Drops Yellow Food Coloring (optional)
Directions
1. Put all your ingredients into your blender or food processor (I use my magic bullet!) and blend for a minute until cornstarch is completely dissolved! This can also be done with a bowl & whisk, I just find the appliance faster & easier.

2. Pour your now cloudy mixture into a sauce pan & put on the stove on medium high. You will want to gently wisk or stir it until it begins to boil. Once it gets hot enough to start bubbling it will thicken FAST! Continuing to stir over the heat for a minute until it has thickened up nicely~

If it is still too thin for your likely add a little more cornstarch but make sure to dissolve it in a little water first.... to thick? Slowly add little water.

Serves 4 almost 1/2 cup servings. Pour over your chicken & enjoy!

    I wonder if this recipe would be better to mix with a chicken boullion vs just water. It is very sweet - almost like a lemon pie filling...perhaps the boullion would be more savory....still enjoyed it though! - 7/2/13
