E2 Winter Squash Stuffed with Lentil Pilaf

1 small (1 lb.) acorn squash, halved, seeds scooped out.1 T. olive oil 1 box Rice and Lentil Pilaf3 T dried cranberries2 T. chopped, toasted pecans
Makes 2 big servings!
Heat oven to 400 degrees. Brush squash halves with oil. Bake on a baking sheet until tender, about 40 minutes. Meanwhile, prepare pilaf according to directions. When cooked, remove half and set aside for another meal. Toss pilaf with cranberries and pecans. Spoon into squash halves. Enjoy!
