Chicken with Okra, Tomatoes and Couscous

Ingredients
* Chicken Breast, no skin - 16 ounces * Okra * *Red Onion - 1 med * Garlic * Baby Bella Mushrooms * Spinach, fresh, * *spelt flour - 1 tsp * Water - 1/2 cup * Canned Tomatoes, 1 can * *Oregano, dried, 1 tsp * Coconut Oil, 1 tbsp * *Couscous (dry), 1 cup
Directions
Heat coconut oil in a deep frying pan.

Add chopped onions and garlic and saute until soft, about 15 min.

Mix water and flour. Add flour mixture, tomatoes, and spices to pan and bring to a boil.

Add okra and mushroom and bring to a boil. Add spinach, reduce heat and cover simmering until desired thickness, about 15 minutes.

Mean while prepare couscous as directed.

Cook chicken breast and season to your taste. I poached/sauteed with non-stick spay.

When all is finished, enjoy, I mixed mine together
