Cannellini Bean Soup

Ingredients
2-14 oz. cans diced tomatoes2 cups savoy cabbage1-14 oz. can cannellini beans, drained & rinsedoregano, thyme, salt & pepper (to taste)
Directions
Pour the tomatoes into a pot and add a can of cold water. Add seasonings and bring to a boil. Reduce heat to simmer. Roughly chop/shred the cabbage leaves and add to the pot. Partially cover the pan and simmer for approximately 30 minutes, or until the cabbage is just tender. Add the cannellini beans and warm through for a few minutes. Check the seasoning and adjust if desired.
