Bourbon Chicken

1. 16 pieces chicken tenders2. 1 Tbsp olive oil3. 2 cloves garlic4. 1/2 tsp ground ginger5. 1/2 cup apple juice6. 2/3 cup firmly packed brown sugar7. 4 Tbsp catsup8. 2 Tbsp cider vinegar9. 1 cup water10. 1/3 cup soy lite soy sauce11. 2 tsp corn starch12. 2 Tbsp water
Cook chicken in oil until lightly browned. Remove from pan. Add #3 - #10 to pan. Heat over medium til disolved. Add chicken. Bring to a boil. Simmer 20 minutes. In small bowl combine corn starch & water then add to chicken just before serving to thicken. Server over rice (preferably brown :) )

This was wonderful! I totally love it. DH is a bit picky and said it was OK - but he only loves something if it's steak. :-P
I will be making this again. I made a veggie stir fry with brown rice to go with it and it was great - only thing im missing is a fortune cookie for dessert! LOL - 8/9/12
