Cheesey Hash Brown Potatoes

Ingredients
2 bags of Simply Potatoes shredded hashbrown potatoes (or ~2 lbs. of any thawed hashbrown potatoes)1 pint of fat free sour cream8 oz. bag of reduced fat colby/monterey jack shredded cheese2 cans of reduced fat cream of chicken soup1/2 cup of chopped onions1 tsp of garlic powderTopping:2 tbsp Smart Balance buttery spread2 cups cornflakes
Directions
Makes 10 3/4 cup servings.
Preheat oven to 350 degrees. Spray casserole dish with non-stick cooking spray.
Combine potatoes, sour cream, cheese, cream of chicken soup and garlic powder in a large bowl. Pour into the casserole dish. Melt butter. Mix melted butter and cornflakes and sprinkle over the top of the casserole. Place uncovered casserole dish in the oven and bake for an hour and 15 minutes, or until bubbly.
