Deb Walker's Ham and Zucchini Quiche

Pre-made double pie crust or boxed pie crust mix, prepared according to package directions3 eggs3/4 c. egg beaters2 cups reduced fat cheddar, shredded2 cups reduced fat Monterey Jack cheese, shredded1 cup Italian blend cheeses, shredded2 cups diced ham2 Tbl. butter2 medium zucchini, shredded8 oz. mushrooms, chopped1 medium onion, chopped1/3 cup milk1/2 tsp. oregano
Press pie crust into 9" x 12" pan (or two 8" or 9" square pans). Saute onions, zucchini, and mushrooms in butter until tender. Beat eggs and egg-beaters. Gradually add cheeses, ham, milk, oregano, and sauteed vegetables and mix well. Pour into prepared pan(s) and bake for 1 hour at 375 degrees.
May also be prepared the evening before and refrigerated overnight (covered), then baked in the morning before serving.
