1 tbsp Canola Oil4 cloves garlic, chopped1 - inch piece ginger, finely chopped2 tbsp red curry paste2 tbsp soy sauce1 cup bok choy1 cup red pepper1 cup green beans (snap)1 cup carrots1 cup mushroom1 cup bamboo shoots10 basil leaves1 - 14 oz coconut milkSaute Garlic & Ginger in Oil for a minute or two, then add Curry Paste and saute for a few seconds, add Soy Sauce & Stir.Add Vegetables, starting with the ones that need to cook the longest, cover over low heat until tender.Add Basil Leaves & Coconut Milk & stir until heated through, then serve.
