Tofu Veggie Stir Fry

3 cloves garlic1 cup chopped onion1 cup chopped raw carrots1 cup sliced green bell pepper1 cup sliced red bell pepper1 cup sliced yellow or orange bell pepper1 cup sliced mushrooms1 cup fresh broccoli florets1 cup fresh snow peas8 oz. can water chestnuts8 oz. pkg. Nasoya cubed extra firm tofu8 Tbs. Kikkoman LIte Soy Sauce2 Tbs. honey3 Tbs. corn starch3 Tbs. Polaner All Fruit Apricot Spread1 tsp. ground ginger
1. Stir fry the garlic and onion in a small amount of water until slightly carmelized.
2. Add the remaining vegetables and keep adding a water a little at a time to steam the veggies and keep them from sticking.
3. In a small bowl, wisk together the soy sauce, honey, corn starch, apricot spread and ginger.
4. Pour mixture into skillet and mix in well with veggies.
5. Continue to simmer until vegetables are tender.
Total cooking time is about 25 minutes.
