Mexican Chicken & Rice

Ingredients
Boneless chicken breast pieces 12 oz1 Box Spanish Rice a Roni1 14 1/2 oz. can stewed tomatoes1 tbs olive oilchopped onionchopped bell peppersalt and pepper to taste
Directions
Brown chicken , onion, and bell pepper in olive oil. When browned, add rice a roni and stewed tomatoes. Season to taste. Bring to a boil then cover and reduce heat to low. Simmer for 20 minutes or until rice is tender. May sprinke with 2 tbs. grated low fat cheddar cheese if desired. Serve with corn tortilla or light tortilla chips.
