2 pounds ground beef 96% lean1 cup bread crumbs1/2 cup parmesan cheese3/4 cup Egg Beaters® 99% egg substitute2 cups beef broth -- divided1/4 cup parsley, freeze-dried1 Tablespoon garlic -- minced2 Tablespoons oregano2 teaspoons basil1 Tablespoon salt1 teaspoon red pepper flakes
Preheat oven to 450º. Combine all ingrediedients except beef in a large mixing bowl (use only 1 cup of beef broth at this time). Add ground beef and mix together thouroughly using a fork to prevent overmixing (this will compact mixture and make meatballs tough). Use portioning scoop and shape mixture into balls ~2" in diameter. Coat a bakinig sheet or shallow roating pan with nonstick cooking spray. Space meatballs on the pan so they're noit touching or crowded together. Cover bottom of pan with remaining 1 cup beef broth. Bake for 25 minutes or until the meatballs are cooked through.
