Baked Cornish Game Hens

3 split cornish game hens3 Tbsp butter, unsalted3 tsp fresh lemon juice1/2 tsp rosemary6 garlic cloves, mincedSalt and pepper4 small potatoes1 large sweet potato2 medium carrots1 medium onion1 tbsp olive oil
1. Rub hens with butter.
2 Combine other ingredients and use to baste hens.
3. Toss potatoes and veggies in olive oil and lay the hens on top.
4. Bake at 350 degrees for 1 hour, basting with lemon mixture every 10 minutes.

I cooked this for Easter dinner. Changed it a little. I did not use butter on the hens. I mixed the olive oil, garlic, lemon juice, and thyme and brushed that on the hens and baked. I loved all the vegetables cooked underneath them. I added carrots to that.This had wonderful flavor. High recomm - 4/4/13
