1/2 c. whole wheat flour1/2 c. oatmeal (McCann's Quick Steel-Cut)1/2 c. egg white protein powder1/4 tsp. baking powder1 tsp. baking soda1 tsp. cinnamon1/2 tsp. nutmeg1/4 c. apple sauce1/4 c. maple syrup1 egg1/2 c. skim milk1 mashed ripe banana8 grated baby carrots1 c. grated zucchini1/4 c. sunflower seeds1/2 c. thawed or fresh blueberries
Combine dry ingredients (flour, oatmeal, egg white protein powder, baking powder, baking soda, cinnamon, nutmeg) in bowl. Combine wet ingredients (apple sauce, maple syrup, egg, milk, banana) and then add to dry ingredients gradually. Stir in zucchini, carrots, sunflower seeds, and blueberries.
Spoon into greased muffin tins, filing them about 2/3 full. Bake at 325 degrees for 25-30 minutes. Makes 42 mini muffins or 12-14 regular size ones. They can be frozen.
Note: Chopped pecans or another nut can be substituted for the sunflower seeds.
