6 med. squash4 oz. fresh sausage1 cup onionsaltpepper1/2 cup of bread crumbsseason saltparmensean cheese
Cut ends off the squash.Boil squash in a large pan till tender. Remove from water and split lengthwise. Deseed squash being careful not to tare the boat. Place squash in a baking dish, put the seeded part in a bowl and set aside. Fry the sausage and onion together in a skillit ad salt and pepper to taste, remove from heat. add the sausage mixture to the squash seeds, add the bread crumbs ,you my add a little water if the mixture is to dry. mix in season salt to taste. Place mixture in the boats, sprinkle with parmesean cheese(optional).Bake @ 375 till brown, serve.
