1 gallon 2% milk1 qt half and half (optional - use for more full bodied yogurt)1 cup dry milk 1 Stoneyfield plain fat free yogurt (any kind with live cultures will work)1/2 cup Splenda granules (subsitute honey or agave if you prefer)2T vanilla extract (optional)
In a very large crock pot, add the half and half first. Take your milk and fill up the newly emptied half and half container. Put that container back in your fridge - you will not be using it for the yogurt. Pour the rest of the milk (should be 3 quarts) into the crock pot. Add 1 cup of dry milk and stir until well blended. Cover the pot and allow to heat up to 180 degrees. This can take a couple hours even using a high setting on the crock pot. (Optional - use a pot on the stove top, or even a microwave - just get the temps to 180 to kill harmful bacterias)
Once that temperature has been attained, cut off the heat and allow to cool to 115 degrees. When that temperature has been reached, remove a cup of milk and put in a bowl. Add the store bought yogurt to the bowl with the milk and whisk smooth. Take the mixture and return to the crock pot and stir gently. Put the lid back on and allow to set for several hours.
Minimum time needed is 4 hours, can go up to 8 hours. The longer you allow it to set, the more tart the yogurt becomes.
Do not disturb the yogurt as it's setting.once the time has gone by (4-8 hours) A covering of whey (nearly clear liquid) will be on the top of the yogurt in the crock. You will see it if you try to tip the crock up on one side to see if the yogurt has set.
When the yogurt is ready, pour off the whey, add in the vanilla and splenda or your sweetner of choice. Put into quart containers and refrigerate. Enjoy!
