2 tomatoes (about 1 pound), cored, seeded, and dices1 can black beans, drained and rinsed2/3 cup fresh corn kernals1/2 cup finely chopped red onion1/4 cup fresh squeezed lime juice2 tbsp chopped flat-leafed parsley1 tsp garlic powder3 dashes hot pepper sauce3/4 tsp salt1/4 tsp pepperTortilla chips for serving
Stir together all ingredients and let stand for 30 minutes to blend flavors. Serve with chips. Serving size is 1/4 cup
