Oven Fried Okra

Ingredients
3 cups slice okra 1/4 in slices2 tabl. whole wheat flour2 tabl. corn mealButter flavored Pamseasoning
Directions
slice okra in 1/4 slices toss with flour, cornmeal and seasoning. Spray and toss, spray and toss again.
Lay flat on baking sheet and bake 15-20 minutes at 350-400
Lightly salt and serve hot

    My husband loved this! I used plain panko bread crumbs instead of corn meal and cooked at 400 unti done and then turned on the broiler at the end to brown it! Took care of his craving for fried okra! - 5/10/11

    Was alright but not as good as I was expecting. Corn meal was a bit crunchy. Perhaps try less of it and a little more flour in the future. Also may try an egg white wash ahead of time, too. Broiled it a bit at the end to cook the tops of the okra a bit more. Tried it with eggplant and it was ok. - 7/24/10
