GAPS veggie Meatloaf

Ingredients
28 oz. grass-fed ground beef1 small can of tomato paste1-2 small summer squashes or zucchini, shredded1 onion, dicedsalt and pepper to taste4 pastured eggs
Directions
Mix the above ingredients together, form loaf in the center of a 9x13 pan and fill in around the edges with veggies and potatoes for an easy one dish oven baked family dinner. 400 degree oven. Serves at least six, with a couple of portions left over....or growing kids who take seconds. 8 servings total.
