Tofu Stir Fry with mushrooms and snow peas

Ingredients
1 block firm tofu1 T garlic (I used 3 cloves)2 T olive oilwater2 T soy sauce2 T white wine vinegar (I misread it - should be white wine, not vinegar!)1 C snow peas1 C mushrooms
Directions
Heat 1 T oil in pan. Add mushrooms and cook until brown and almost crisp. Remove with slotted spoon. Add 2nd T oil and cook garlic (and fresh ginger if you like) for 10 seconds. Add snow peas and broccoli and cook ~3 minutes until bright green. Add tofu and 1/4C water and white wine, cook until half the liquid has evaporated. Add the soy sauce and scallions. Serve with rice.
