Crockpot Tex Mex Chicken Stew

Ingredients
2 frozen chicken breast16 oz jar of salsa1 can of corn1 can of chili beans1 packet of reduced sodium taco seasoning1 block of fat free cream cheese
Directions
Put everything but the cream cheese in your crockpot..
Cook on low heat for 8 hours or high heat for 4 hours..
Once finished I remove chicken and shred it with a fork then add it back to mixture..
Then add cream cheese, stir until melted.

You can eat this as a stew, add over rice or put on a tortilla.. I eat as a stew so I put as 4 servings but if you add over rice you can get more servings out of this. Enjoy!

    I made this with a frozen bag of corn, reduced fat cream cheese and black beans (2 cans) just because that's what I had on hand. This was flavorful and delicious. I will definitely make it again! - 11/13/11
