Rasmalai ( with ricotta cheese)

Ingredients
*Ricotta cheese, fat-free, 9 oz Granulated Sugar, 1.5 cup Fat free half and half, 3 cup (Pistachio Nuts, 1.5 oz Saffron, 1 tsp
Directions
first mix the ricotta cheese, some of the nuts and 1cup of sugar. make a nice gooey mixture...make sure to mix the cheese very well to avoid lumps.

Then fill a muffin pan 3/4 full with this mix and bake in the oven at 400F for 30min. Make sure it browns a bit and to see if they are done, prick with a knife or fork and it should come clean. Let them cool before taking out from the pan.

Meanwhile, heat the milk and remaining nuts and 1/2 cup sugar till the milk thickens a bit. and let it cool.

Take the Malai out of the muffin pan without breaking them and put in a bowl and pour the milk on top. and serve chilled.
