Roasted Rosemary Red Skins

Ingredients
3 cups red skin potatoes, diced1 medium sweet onion, sliced2 tbsp. olive oil1 tbsp. dried rosemarysalt and pepper to taste
Directions
1) Pre-heat oven to 400 degrees.
2) Wash and cut potatoes into bite sized pieces.
3) Slice onion
4) Mix potatoes, onion, olive oil and seasonings in a mixing bowl and pour onto a cookie sheet.
5) Bake in oven at 400 degrees for 20 minutes, turn once.

Divide into 4 servings.
