Pineapple Fried Rice with tofu

Tofu, extra firm, 1 block Dole Pineapple Tidbits 100% Pineapple juice, 1 cup White Rice, 3 cup prepared the day aheadCanola Oil, 2 tbsp Peas, frozen, 0.5 cupOnions, 1 medium Green Peppers (bell peppers), 0.5 cup, choppedSoy Sauce, 1 tbsp1/4 cup cilantro
Pat tofu dry with towels and cut into cubes, any size you like. Add 1 tbs oil to non stick skillet and sautee tofu so it's browned on all sides. Remove to plate and set aside. Add second tbs oil to skillet and cook onion and pepper on high heat unti the pepper is a little charred. Add peas and rice and sautee until hot. Add Pineapple and reserved tofu. and cook for a few more minutes. Sprinkle cilantro on top, add 1 tbsp soy sauce or to tast. Mix and enjoy.
