Reduced calorie Punkana Bread

4 cups whole wheat flour1 tsp baking soda4 tsp baking powder1 tsp salt1 Tbsp pumpkin pie spice2 cups Splenda sugar blend for baking1/4 cup ground flax seeds1 cup egg subsitute1 cup fat-free milk2 cups canned pumpkin2 ripe bananas, mashed
Makes 2 loaves 16 slices per loaf for 32 total servings
Preheat oven to 350 Degrees
Combine all dry ingredients except flour in a large mixing bowl. Make a well in the center.
Combine all wet ingredients in a medium bowl and mix until combined. Add to dry ingredients and whisk together until smooth. Gradually add in flour, stirring lightly until moistened.
Line 2 large loaf pans with parchment paper and lightly coat with nonstick cooking spray. Spoon batter into pans, dividing equally.
Bake for 1 hour or until toothpick comes out clean. Cool loaves in pan for 10 minutes then transfer to cooling rack.
