Mashed Cauliflower

Ingredients
Directions
1 medium head of Cauliflower1 clove garlic1/2 cup finely chopeed onion1 T olive oil.25 cup Trader Joe's Greek Style, non-fat plain yogurt Salt and Pepper to taste
-steam cauliflower until very soft, drain until all water is off
-in large saute pan, cook onions in olive oil until brown and carmelized, add garlic the last few minutes to saute
- add cauliflower to pan with onions and garlic
- with immersion blender, mash cauliflower to desired consistency (can be done by hand, but you won't get smooth consistency
-add yogurt and return to low heat to warm and cook off last bit of liquid, if any
- add salt and pepper to taste
- enjoy!

I made this...but added LOTS more garlic - used a Large head of cauliflower and steamed it in fat free chicken broth. I then added one cup of lowfat cottage cheese (could have used about 3/4 cup) and then seasoned with dried ranch dressing mix. Sprinked the top with a dash of Paprika ! YUMMMM - 10/27/08
