Ingredients
chicken( 400gms about 2 pounds) , rotel( 2 small cans), smart taste spaghetti whole box (16 oz), onion, small can tomato sauce, garlic to taste, you may add cayenne pepper if you like it extra spicy, one can tomato water, velveeta (16 oz) to taste.
Directions
Cook chicken in 2 tablespoons olive oil. Chop and set aside. Cook rotel, tomato sauce, water, garlic and onion with about 1 tablespoon olive oil. Cook spaghetti as desired. Then combine chopped chicken, velveeta and spaghetti in rotel mixture and cook until it looks fabulous!! This is my healthy version. The original has one stick butter in place of olive oil and regular spaghetti instead of Smart Taste ROnzoni...this spaghetti has 6 gms of fiv=ber per serving as opposed to 2 gms for regular..Enjoy!! makes 8 filling 1 cup servings
