1/4 cup Extra Virgin Olive Oil1 Large Spanish Onion, Chopped3 Large Red Peppers, cored and cut into medium pieces2-3 cloves of garlic1 tbs balsamic vinegar2/3 cup water1 tsp. dried oregano1 tsp dried basil1/3 cup chopped Italian Parsley1/4 tsp. Red Pepper FlakesSalt & Pepper to taste
Heat Olive Oil in large heavy saucepan over moderate heat. Add onion and cook until soft and golden, about 15 minutes. Add peppers, cover pan, reduce heat to low and cook 15 minutes. Add remaining ingredients and stir until blended. Cook, covered, 15 minutes on low stirring frequently. Pulse in food processor until course. Serve over linguine.
