Potato-Crusted Catfish

Ingredients
1/2 c. low-fat buttermilk2 garlic cloves, minced, or 1 t. minced bottled garlic3/4 c. instant potato flakes (not granules)4 catfish fillets1 T. butter
Directions
Combine buttermilk, garlic and 1/4 t. each salt and pepper in shallow dish. Place potato flakes in another shallow dish. Dip fillets in buttermilk mixture, dredge in potato flakes. Melt butter in large nonstick skillet over medium-high heat. Add fish, cook 3 min. per side or until golden and the fish flakes easily when tested with a fork. Serve with lemon wedges, opt.
