Scrambled egg skillet breakfast-no meat version

6 lg eggs1/4 c. chopped bell pepper2-3 mushrooms chopped1.25 c frozen southern style hash browns1 c. shredded cheddar cheese1 tbsp olive oil
cook hash browns to desired doneness in hot pan with the olive oil. Scramble the eggs, bell peppers, mushrooms and half of the cheese. Pour egg mixture over done hashbrowns. cook until done. Top with remaining cheese.
Split between 4 bowls and serve with toast!
