6 boneless skinless chicken breasts1/2 tsp. salt1/4 tsp. black pepper4.4 oz. tub of Boursin Garlic & Herb cheese2 oz. shredded Mozzarella cheese10 oz. package frozen spinach, thawed 3 pats butter
Preheat oven to 375 degrees F. Wrap the thawed spinach in double thickness paper towels and squeeze to remove all water. Mix the drained spinach with the cheeses. Pound each breast to 1/4 inch thick and season on both sides with salt and pepper. Divide spinach mixture into 6 portions and roll each portion into a 3 inch log. Place a cheese log onto inner surface of each breast and roll to completely cover log. Place stuffed breasts into sprayed baking dish with seam side down. Sprinkle top of breasts with some garlic powder and paprika then divide butter and place on top of each breast. Bake for 40 minutes or until chicken juices are no longer pink. Serve at once. makes 6 servings. 1.6 net carbs per serving
