Crustless Spinach Quiche

Ingredients
1 10 ounce pkg Frozen spinach3 cups any low fat shredded cheese5 eggs or egg substitute1 medium onion1/2 tsp. salt & 1/4 tsp. pepper1 tblsp. veg. oil
Directions
Preheat oven to 350 degrees, lightly spray Pam in a 9 inch pie plate.
Heat oil over medium heat, add onions and cook, stir occasionally until onions are soft. Stir in spinach and cook until exess moisture has evaporated.
Combine eggs, cheese, salt and pepper in a large bowl. Add spinach mixture and blend together.
Pour into prepared pie plate.
Bake in preheated oven until eggs have set, about 30 minutes.
Let cool for 10 minutes before serving.
I used regular eggs, have not tried recipe with egg substitute.
