Apple Tea Cake

Ingredients
Butter, salted, 125 grams *Caster sugar CSR, 180 gramsVanilla Extract, 1 tsp Egg, fresh, 3 jumbo *Flour, white, 2 cup Baking Powder, 2 tsp Milk, 2%, 75 mL Apples, fresh, 2 small (2-1/2" dia) Cinnamon, ground, 1 tsp
Directions
Cream butter and sugar. Add vanilla and eggs and beat. Sift flour and baking powder 3 times and add to mix in 3 parts, alternating with milk to keep batter loose. Slice apples thinly. Add a 1/3 of the batter, a thin layer of apples and a sprinkle of cinnamon. Repeat and end with a layer of batter and sprinkle with cinnamon sugar if desired. Bake in a moderate oven for 30-35 mins (or 165C/330F with fan).

1. Any shaped pan will do, but I find a square tin makes portion control easier.
