Ingredients
1 bag dried lentils2 cups rice ( I mix white and brown)4 large onions sliced2tbs olive oil
Directions
Saute onions in olive oil until dark brown set aside reserve oil
Boil lentils in 4 cups of water until tender add rice, and salt to taste bring to boil cover cook until all water is absorbed, stirring occassionally, add the reserved oil from the onions and serve with fried onions. Makes 16 side servings or 8 main dish servings

    I have been making this recipe for lunch for more than 2 weeks now. I do not add the onions or the oil used in the above recipe. I use 30 grams lentils and 30 grams rice and the amount is very satisfying for lunch or dinner with a big side salad. I do, however, use 1/2 tbsp. olive oil in the salad. - 10/10/09
