Three Bean Couscous Salad

Ingredients
1 1/2 Cups Water1 1/2 Cups dry couscous1 (15 oz) Can of mixed beans (kidney, pinto & black) - Drained1 large carrots, diced3 celery stalk, diced1 bunch green onions, chopped1/2 cup parsley, minced1/2 cup cilantro, minced1/4 cup mint, mincedMarinade:1/4 cup olive oil1/8 cup canola oil1 tbsp champagne wine vinegar1 tbsp lemon juice4 gloves garlic, minced or crushed1 tsp clery seed 1/2 tsp dried oregano1/2 tsp pepper 2 tbsp honey+ Feta Cheese (Optional, Not Included in Nutritional Data)
Directions
Place couscous in large glass bowl. Bring water to a boil and then pour over couscous. Cover and let sit for 5 to 10 minutes. Remove lid and let cool.

Place chopped vegetables and fresh herbs in bowl and mix well. Add cooled couscous. Pour marinade over entire bowl and mix again. Eat warm with 1 tbsp feta cheese sprinkled on top or chill and then serve.
