Swiss Chard Soup

1 head - Swiss Chard (you can substitute with Spinach, Escarole or Kale)3 or 4 - White Potatoes (depending on size)1 – Slice Day Old Italian Bread5 – Garlic Cloves¼ Cup – Extra Virgin Olive Oil4 - Vegetable Broth (to cut down on Sodium you can use Water or Low Sodium Vegetable Broth)
Peel then cut potatoes into ½ inch cubes. In large pot add Potatoes & cover with 4 cups Vegetable Broth (or Water). Boil 10 minutes then add Swiss Chard (washed & roughly chopped). Bring to a boil then reduce heat to a low simmer. While soup is cooking, peal & chop garlic, then in separate pan add Olive Oil & Garlic sauté for 5 to 7 minutes. When Garlic is brown add Garlic and Oil mixture to the pot with Potatoes & Swiss Chard. Cook together another 5 to 7 minutes or until Potatoes are soft. Just before serving add the Italian bread that has been chopped into bite sized pieces.
