Vegetarian, Black Beans and Quinoa

Onions, 1 cup, choppedGarlic, 2 clovesExtra Virgin Olive Oil, 1 tspSwanson Certified Organic Vegetarian Vegetable Broth, 1.5 cupQuinoa, 0.75 cupGround Cumin, 2 tspGround Cayenne Pepper, 1 tspFlavorite Super Sweet White Corn, Frozen, 1 cupS&W Black Beans Less Sodium, 2 cansHunt's Tomatoes, Petite Diced, 1 can
Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.
Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 10 minutes.
Stir frozen corn, beans, and tomatoes into the saucepan. Continue to simmer about 10 minutes.
