Ingredients
2 T olive oil1 large diced onion2 med. garlic cloves2 med sliced zucchini14.5 oz. petite diced canned tomatoes2 cans of drained, rinsed northern beans1 T oregano1 T basilsalt & pepper to taste8 slices of Reduced Fat Sargento Provolone cheese
Directions
preheat oven to 350 degree. Heat oil and saute onion & garlic til softened. Add zucchini, stirring constantly until tender-crisp, about 3 min. Stir in tomatoes, beans and seasonings. Bring to boil. Transfer mixter to casserole dish, top with cheese and bake 25 min.

    My husband and I had varying opinions on this dish. He could eat it as a side but not a main dish, I could eat it for both. Next time I am going to make it with pinto beans and less cheese. - 8/2/07
