Wheat Bran Muffins, Lowfat and Low Sugar

Ingredients
1.5 cup wheat bran1.5 cup whole wheat flour1 egg1/4 cup veg oil1/4 cup sugar2 tbs molasses1 tsp salt1 tbs baking powder1 cup milk
Directions
Soak the bran in the milk 5 min; combine other dry ingredients in a separate bowl. Mix the oil, egg, and molasses in a measuring cup and add to the bran mixture with any fruit you want to add (blueberries or chopped apple are especially good.) Mix bran mixture into dry ingredients. Spoon into cups and bake at 400 20-25 minutes. Makes 12.

    I made these this morning for breakfast. I had to make a few substitutions - used fat free milk, wheat germ instead of wheat bran, safflower oil instead of vegetable oil and added a 1/2 cup of dried zante currents. Came out great, even my children loved them. Will make again! - 1/16/12
