spicy pumkin soup

1 kg of raw pumpkin, diced 1 garlic clove, 2 mediums yellow onions, chopped2 granny apples, diced3 cm of fresh ginger root, grated1 tsp of curry powdersalt, black pepper to taste1 or 2 cubes of chicken brotholive oil4 to 6 cups of water
in a pot, put olive oil and sauté onions a few minutes. add apples. ginger root, garlic clove and curry powder. sauté another 2 minutes. add pumpkin, stir well and add water. once the water is warm add the cubes of chicken broth. simmer until pumpkin and apples are "falling apart".
mix in food processor. it's supposed to be creamy, but depending on your taste you can use all the broth or not, and get a "thicker" soup. it makes a big quantity of soup, you can freeze it and use it later. I'm not sure of how many servings it makes, I would say 10 1-cup serving.
