Dangerously Chocolatey Cookies

Ingredients
75g / 3oz / 6tbsp unsalted butter75g / 3oz / 6tbsp caster (superfine) sugar75g / 3oz / 6tbsp soft light brown sugar1 large (extra large) egg½ tsp vanilla extract150g / 5oz / 1¼ cups self-raising flour25g / 1oz / ¼ cup cocoa powder¼ tsp salt100g / 4oz chocolate chips
Directions
Pre-heat oven to Gas Mark 4 / 180C / 350F and line 2 baking sheets with parchment.
Cream the butter with the sugars until pale and fluffy.
Beat in the egg and vanilla extract.
Sift the flour, cocoa powder and salt over the mixture and fold in.
Stir in the chocolate chips.
Place four heaped tablespoons of the mixture well apart on each baking sheet.
Spread the mixture with the back of a wetted spoon and bake for 12 minutes, until risen and set.
Leave on the sheets for a minute to firm up, then cool on a wire rack. Repeat with the remaining mixture.
