Ingredients
Directions
Asparagus, fresh, 311.8 grams Onions, raw, 1 slice, large (1/4" thick)3/4 cup boiling waterLight Cream (coffee cream or table cream), .5 cup Milk, 1%, 1 cupSalt, .5 tspPepper, black, 1 dash
Snap the ends off one pound of asparagus and cut into 1-inch pieces. The odd gram conversion is because the ingredients wouldn't give me the option for ounces. When I was done cutting it all up, this was about 11 ounces.
Dice a thick slice of diced onion.
Mix asparagus and onion in a saucepan with 3/4 cup of boiling water. Cook covered for 10 minutes.
Pour UNDRAINED asparagus and onion into a food processor with 1 cup of milk, 1/2 cup of light cream, 1/2 teaspoon of salt, and a dash of pepper.
Purree for a good and plenty while--there should be no chunks!
Makes four 3/4-cup servings.
