4 to 4.5 oz boneless, skinless chicken breast1 oz mozzarella cheese2 thin slices pancetta2 fresh basil leaves, minced1/4 c thawed out, frozen spinach, drainedzesty Italian dressing1 Tbsp butter1 Tbsp olive oilany type of seasoning (I prefer Goya Adobo seasoning)
cut chicken breast to make pocket.
season inside with seasoning and Italian dressing
add mozzarella slices, then pancetta, then spinach, then basil.
close seams with toothpick.
season outside and with some Italian dressing.
allow to marinade.
heat oil and butter.
pan sear chicken on both sides until brown on both sides
back in oven for 20-25 mins at 350 degs
serve
